A market built around sourcing standards
Wilder’s approach is guided by what it calls The Wilder Standard, a framework for selecting products and ingredients. It considers factors including food quality, production and labor practices, animal welfare, environmental health and taste. The company says it will favor relationships with regional producers, with partners including Paradise Farms, Glaser Organic Farms and White Oak Pastures.
The framework was developed with independent specialists in areas such as nutrition, food science, regenerative agriculture and food systems. The Environmental Working Group is a founding advisor, in what the announcement describes as the nonprofit’s first partnership with a retailer on health standards. Wilder says the standard is intended to evolve as research develops.
Groceries, café fare and chef-prepared meals
The planned assortment will include everyday groceries alongside grass-fed beef, pasture-raised poultry and responsibly sourced seafood. Prepared options are expected to range from made-to-order sandwiches to salads, vegetables and protein-focused dishes. The café program will offer coffee, breads, juices and smoothies, with choices intended to serve customers throughout the day.
Grassfed Culture Hospitality, the Miami group behind Michelin-recognized Los Félix and Krüs Kitchen, created Wilder’s culinary and beverage program. The company says it will apply its restaurant focus on seasonal and locally sourced ingredients, while the drinks selection is set to include organic, natural and biodynamic wines, craft beer and non-alcoholic options.
Investors and design
Major Food Group, whose restaurant portfolio includes CARBONE, Sadelle’s and The Grill, is joining as a founding investor and strategic advisor. The company said Wilder is its first investment in a grocery retailer and its first investment outside its own operations. Its role is expected to include advice on operations and potential long-term growth.
Miami-based Love Lake Studio is designing the market, drawing on old-world markets, the English countryside and vintage Americana. Plans call for natural light, vintage furnishings, a patio and an outdoor pickup window. Wilder’s founders describe the space as a community gathering place as well as a destination for shopping and eating.
