Varughese, the banking entrepreneur and restaurateur behind Miami’s private members-only restaurant Haiku, conceived Royale after experiencing Savoy in Japan. Alongside Haiku Executive Chef Albert Diaz, formerly of Zuma London and Zuma Miami, Varughese set out to recreate the style for South Florida diners.
A team built around technique
Chef Dalila Sabatino will join Bun in the kitchen. She has worked with Bun and with pizzaiola William Joo at Los Angeles’ Pizzeria Sei, another prominent name in the Tokyo-style Neapolitan movement. Bun has praised Sabatino as one of the most talented pizzaiolas he has worked with.
Operations will be overseen by Oscar Coll, a hospitality professional with more than two decades of experience. Audrey Armada, Royale’s Head of Customer Experience, will guide the front-of-house operation after years in hospitality and membership experiences at Haiku.

At the center of Royale’s offering will be dough fermented for more than 30 hours. The team says the formula required extensive experimentation in Tokyo and Miami, including the selection of artisan flours, adjustments for particle-size differences, the use of the autolyse technique and carefully controlled fermentation.
The process also involves modifying the water’s softness to approximate Japanese conditions. These details are intended to produce pizzas that are airy, crisp and highly digestible while maintaining the character of Neapolitan pizza.
A casual, walk-in dining experience
Royale will seat approximately 65 guests, with a large communal table anchoring the dining room. The restaurant will not take reservations; seating will be available on a first-come, first-served basis.
Guests will order at the counter from a focused menu featuring four traditional pizzas, three specials, antipasti, two pastas and two main dishes. Takeout and delivery are also planned for opening, giving the concept a format suited to both destination diners and neighborhood customers.
