Miami Beach is set to welcome Royale Pizza Napoletana this October, introducing South Florida to the highly specialized Tokyo-style Neapolitan pizza tradition. The new restaurant at 1680 Meridian Avenue will unite Japanese pizzaiolo Chef Bun, restaurateur Jess Varughese and a seasoned culinary team in a fast-casual setting near Lincoln Road.

Key takeaways

  • Royale Pizza Napoletana is expected to open in October 2026.
  • The restaurant will be South Florida’s first Tokyo-style Neapolitan pizza concept.
  • Chef Bun of Tokyo’s Savoy will lead the pizza program with an experienced team.
  • The 65-seat restaurant will offer walk-in dining, takeout and delivery.
  • Its menu will include pizzas, antipasti, pastas and main courses.

Royale Pizza Napoletana is designed to bring a style of pizza-making that has gained a devoted following in Japan and expanded to select U.S. cities. Its arrival adds another internationally influenced dining concept to Miami Beach’s evolving restaurant scene.

A Tokyo-inspired pizza concept arrives in Miami

The restaurant will mark the U.S. arrival of Chef Bun, the influential pizzaiolo associated with Savoy, a celebrated Japanese Neapolitan pizza concept. The restaurant’s approach emphasizes technical precision, extended fermentation and a delicate balance between a light interior and crisp, flavorful crust.

Varughese, the banking entrepreneur and restaurateur behind Miami’s private members-only restaurant Haiku, conceived Royale after experiencing Savoy in Japan. Alongside Haiku Executive Chef Albert Diaz, formerly of Zuma London and Zuma Miami, Varughese set out to recreate the style for South Florida diners.

A team built around technique

Chef Dalila Sabatino will join Bun in the kitchen. She has worked with Bun and with pizzaiola William Joo at Los Angeles’ Pizzeria Sei, another prominent name in the Tokyo-style Neapolitan movement. Bun has praised Sabatino as one of the most talented pizzaiolas he has worked with.

Operations will be overseen by Oscar Coll, a hospitality professional with more than two decades of experience. Audrey Armada, Royale’s Head of Customer Experience, will guide the front-of-house operation after years in hospitality and membership experiences at Haiku.

The science behind the dough

At the center of Royale’s offering will be dough fermented for more than 30 hours. The team says the formula required extensive experimentation in Tokyo and Miami, including the selection of artisan flours, adjustments for particle-size differences, the use of the autolyse technique and carefully controlled fermentation.

The process also involves modifying the water’s softness to approximate Japanese conditions. These details are intended to produce pizzas that are airy, crisp and highly digestible while maintaining the character of Neapolitan pizza.

A casual, walk-in dining experience

Royale will seat approximately 65 guests, with a large communal table anchoring the dining room. The restaurant will not take reservations; seating will be available on a first-come, first-served basis.

Guests will order at the counter from a focused menu featuring four traditional pizzas, three specials, antipasti, two pastas and two main dishes. Takeout and delivery are also planned for opening, giving the concept a format suited to both destination diners and neighborhood customers.

Miami Beach location

Royale Pizza Napoletana will occupy 1680 Meridian Avenue, just off Lincoln Road. With its combination of Japanese technique, Neapolitan tradition and accessible service, the restaurant is positioned to make Miami Beach a new destination for pizza enthusiasts when it opens this fall.
